Honey Soy Carrots

Ingredients

  • 2 lbs. Carrots, peeled and cut into 2-by-½-inch sticks
  • 2 T unsalted Butter (I use Miyoko’s or Melt butter (currently unavailable, at least in my area))
  • 2 T Tamari soy sauce
  • 1½ T Honey

Directions

  1. Bring a large saucepan of salted water to a boil.
  2. Add the carrots and cook until tender, about 8 minutes. Drain.
  3. In a large skillet, melt the butter.
  4. Stir in the carrots and soy sauce and cook over high heat until the carrots are browned in spots, about 2 minutes.
  5. Stir in the honey and cook until the carrots are glazed, 2 minutes longer.
  6. Transfer to a platter and serve.
