Cinnamon Pearsauce

Ingredients

  • 8 Bartlett pears, skin-on, diced
  • ¾ cup water
  • ⅓ cup pure maple syrup
  • 1 T ground cinnamon
  • 2 t pure vanilla extract
  • A dash of coarse salt

Instructions

  1. Place pears, cinnamon, water, maple syrup, vanilla extract, and salt in the Instant Pot and make sure the vent is closed.
  2. Set the Instant Pot on high pressure for 12 minutes.
  3. Once it beeps, let it sit about 10 minutes, until pressure seal opens. Remove the lid.
  4. Place in your blender and blend the %$@& out of it (I prefer smooth and creamy), or until you get the desired consistency.  You may need to do this in batches.
  5. Eat first, then place the rest in containers, let cool, then refrigerate.

To can this pearsauce:

  1. Wash, your jars and lids, then boil them for 10 minutes.
  2. Fill them with pearsauce, then seal, and fit with the lid.
  3. Boil filled and sealed jar for 10 minutes. Be sure lids pop, then store in the pantry for up to 1 year (if it lasts that long).
