Damned Fine Schnitzel-Spätzel Chicken Soup

Ingredients:

  • 2 crowns broccoli
  • ½ crown cauliflower
  • 3 carrots
  • 3 cartons chicken stock (Inspired Organic brand)
  • 1 bunch fresh parsley
  • 1-2 t salt
  • 1½ lbs. chicken breasts
  • 1 dash onion powder

Ingredients for Spätzle:

  • 2 cups brown rice flour
  • ½ t salt
  • ½ t nutmeg
  • 3 large eggs
  • ¾ cup unsweetened almond milk

Directions for soup:

  1. Cut veggies into fine chunks.
  2. Toss ’em in the pot.
  3. Add chicken stock, salt, onion powder, and chicken breasts to the pot.
  4. Cook until it screams!
  5. When the chicken noodle soup (without the noodles) is finished cooking, add the spätzels.

Directions for Spätzles:

  1. Whisk the flour, salt, and nutmeg in a medium-sized bowl.
  2. Add the eggs and milk and beat until smooth.  This will produce a thick, pasty, dough.
  3. Using two spoons, scoop dough onto one spoon and scrape the amount of approximately of ½-inch cubes into the pot.
