Ingredients:
- 2 crowns broccoli
- ½ crown cauliflower
- 3 carrots
- 3 cartons chicken stock (Inspired Organic brand)
- 1 bunch fresh parsley
- 1-2 t salt
- 1½ lbs. chicken breasts
- 1 dash onion powder
Ingredients for Spätzle:
- 2 cups brown rice flour
- ½ t salt
- ½ t nutmeg
- 3 large eggs
- ¾ cup unsweetened almond milk
Directions for soup:
- Cut veggies into fine chunks.
- Toss ’em in the pot.
- Add chicken stock, salt, onion powder, and chicken breasts to the pot.
- Cook until it screams!
- When the chicken noodle soup (without the noodles) is finished cooking, add the spätzels.
Directions for Spätzles:
- Whisk the flour, salt, and nutmeg in a medium-sized bowl.
- Add the eggs and milk and beat until smooth. This will produce a thick, pasty, dough.
- Using two spoons, scoop dough onto one spoon and scrape the amount of approximately of ½-inch cubes into the pot.
