Amazing Buffalo Sweet Potatoes

My family went nuts over this recipe, especially when I first served it (with my Amazing Buffalo BBQ Ranch Chicken Bites).

Ingredients:

  • 2-2½ lbs sweet potatoes, peeled and cubed or cut into fries
  • 6 Tbsps olive oil

Seasoning:

  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder or granulated garlic
  • 1 tsp salt
  • Combine chili powder, cumin, garlic powder, and salt into small bowl.

Directions:

  1. Preheat oven to 425° or the grill to medium-low.
  2. Place sweet potatoes into stainless steel bowl and drizzle 1 Tsp oil.
  3. Sprinkle seasoning over the sweet potatoes and mix with your hands.
  4. Place sweet potatoes onto 9×13 baking sheets with parchment paper and cooling racks.
  5. Put pans into oven or the grill for 20-25 (probably more) minutes, flipping the potatoes once or twice and rotating halfway through.  They should be deeply browned in spots and soft in the centers.

Notes:

  1. This is adapted from a recipe I found on line, but I don’t remember where.  I think I’ve made a solid effort to find it.  The original recipe is combined with “my” recipe for “Amazing Buffalo BBQ Ranch Chicken Bites”.  If someone recognizes this and can give me the original address, I’d greatly appreciate it.
  2. I originally copied this recipe only for my family’s consumption.  At the time, I hadn’t intended to make a blog about these recipes.
  3. The “Amazing” adjective is because my grandson thought this recipe was beyond normal. The “Buffalo” adjective is because my wife wanted it.
