Food-Allergy-Friendly Foods: Gluten free, dairy free, corn free, egg free, apple free, xantham gum free
I am an untrained cook who has been my family’s primary cook for over 1000 days! My training to be a cook began in elementary school where I learned to read and follow directions. It continued when I decided to use the web to find good recipes, but I’m getting a little ahead of myself.
Once up a time, my daughter decided to try her hand with a dish that had been a favorite from a local Thai restaurant: Red Curry Soup with rice. She wanted to make it because the restaurant changed their recipe and, suddenly, just like that, my family’s allergy symptoms kicked in.
I had always thought that cooks had a special talent for creating delicious recipes and I still do (culinary magic!). Never in my life did I expect to be the primary cook for the family, especially since my wife is a great cook. Nevertheless, inspired that us mere mortals can make delicious food, I decided to try a few recipes myself. I found some favorites on line; these are included on this site because they have passed the “oh, damn” test, not only from damned fine my wife and damned fine adult daughter, but also from my damned fine teenage grandson. High praise, indeed!
Even more praise: when my wife and daughter (again, damned fine) take these dishes to work as their lunch, they report that their coworkers are envious. Lately, some coworkers have been asking for these recipes. I started this blog because I figured that if some people like these recipes, others might, too.
To be clear, all these recipes are safe for my family; my only goal, at first, was to make allergen-free food that, when my wife and daughter came home from a stressful day (kids have their own special taste preferences), the only thing they needed to think about was whether the dinner was delicious. I now have a binder full of recipes.
I distinguish myself from real cooks by admitting that I follow recipes, not create them. Any modifications are done to make certain that the dishes are safe for my family. For a list of allergens (at least for our family) and our substitutions, you may click here.
